My Go-To Easy Salad for Spring
I’ve never been a huge salad girl. I’ll definitely eat them and there’s lots out there that I love. But I never crave salad or want to make it at home. But this salad guys!! I don’t know what it is but I’m addicted. Maybe because it’s loaded with deliciousness, but I’ll let you decide for yourself.
I keep my toppings in jars in my pantry for easy access and, let’s be honest, aesthetics. It matters to me what my pantry looks like ok! Lately I’ve been making this salad a lot for my lunches, so I’ll make enough dressing to last me the week. And I store it in my favorite salad dispenser. The dressing is adapted from a hello fresh recipe that we got awhile back and it makes the salad in my opinion. Play around with the proportions to get the sweet/tangy balance you like!
THE SALAD
spring mix
maple walnuts (from HEB, TO DIE FOR)
chopped pecans
dried cranberries
feta cheese (or blue cheese)
sliced apples
THE DRESSING
equal parts apple cider vinegar + mayonnaise
a drizzle of maple syrup (to your liking)
salt and pepper
